薇菜干先煮20分钟，用温开水涨发好，并需多次换温水脱净涩味，挤挣涩汁备用，通脊内切成丝漂去血水备用。 薇菜用熟猪油小火煨好调味盛放在盘中。用鸡蛋清上浆，肉丝滑炒
，然后放入青椒组织上、薇菜，勾芡淋明油即成 。
