主料
草鱼肉300克、瘦猪肉150克、鸡蛋2个、湿香菇15克、面粉50克、方鱼末5克、生油500克(耗100克)、胡椒粉、精盐、味精各少许。
做法
1、将草鱼肉用刀切成厚片,再把鱼厚片中间片开(鱼片一边要相连),腌入姜、葱、味精后待用。
2、把瘦猪肉剁成茸,香菇切成细粒,和入以上味料、鸡蛋白,拌匀成馅酿入鱼片中间,撒上面粉待用。
3、将炒鼎上火,倒进生油,候油热时逐件放下鼎炸至金黄色捞起,摆进餐盘淋上胡椒油后才采盘。上菜时要配上甜浆2碟。

酥香软滑。
