性质:系葡萄糖、鼠李糖和柚配质的复合体。白色至浅黄色结晶性粉末。从水中结晶得含6-8个结晶水和晶体,熔点83℃,在110℃干燥至恒重得含2个结晶水的本品,熔点171℃。极苦,用水稀释至1:10000仍有苦感。1g该品溶于1000ml水;1g该品可溶于75℃10ml水。溶于丙酮、乙醇和温热的冰乙酸。

制备方法:由葡萄柚(Citrus paradisl)、夏柑、柚等柑橘类果皮抽提物加工而得。

用途:苦味剂。本品经水解加氢所得柚苷二氢查耳酮为甜味剂,甜度约为蔗糖的150倍。
