原料
冷却净牛上脑肉400克、大白梨1个、鸡蛋黄1个、精盐、白糖、味精、九度米醋、熟芝麻、蒜茸、香油各适量、生菜叶若干张
制做方法
1、郾牛上脑肉切二粗丝;大白梨去皮除核后,切丝,再分成两份。
2、郾精盐、白糖、味精、米醋放入碗中调匀,再放入蒜茸、香油、牛肉丝与1份梨丝拌匀,并将其团成圆形。
3、郾把剩下的1份梨丝摆在生菜叶上,放在盘子一侧,牛肉团放在中间,并在上面按出一凹形,最后放上蛋黄,撒上熟芝麻,即成。
