[原料] 羊腿1只(约1500克),大块葱、姜,科酒、蒜茸辣酱、干淀粉、自制孜然酱适量,色拉油1500克。
[烹调方法]
1.将羊腿洗净,下入清水锅中煮熟捞出,并将肉撕成小块,抓匀蒜茸辣酱、干淀粉,下入六成热油中,至表皮酥脆时捞出。
2.勺内加底油,放入葱、姜块、孜然酱炒香,投入羊肉块,烹少许料酒,翻匀之后,包入锡纸中,装盘即成。
[特色点评] 羊肉酥嫩,孜然味浓。
注:孜然酱由孜然、辣椒粉、咖喱酱、花生酱、黑芝麻、盐、色拉油等炒制而成。
