性质:利用脂肪酶的催化作用使油脂进行水解的方法。鉴于常用的油脂水解方法都要在较高的温度和压力下进行,对设备的要求较高,而且能量消耗较多。而酶的作用常是在常压和室温条件下进行,因此从节约投资降低生产成本来看似乎是有吸引力的。但是,要实现有竞争力的工业化生产,在保持产品质量和得率的前提下,真正达到降低能耗和节约投资的目标,还要解决酶的活性和持久性、适宜的反应温度、酶与反应产物的分离等一系列问题。这个方法尚在开发之中。
