补充资料：马铃薯鲜醋
将马铃薯切成细丝，加水浸渍2小时，捞起沥水后放人蒸笼蒸煮。如用干马铃薯丝，则要切成米粒大小，浸渍处理与鲜丝相同，蒸熟后拌人少量的炒麦粉，取鲜马铃薯曲50公斤，加水45公斤(或干马铃薯50公斤，加水200公斤)，在55℃条件下糖化约5小时，冷却至30℃时加入酵母菌培养液20公斤，使其在28℃下发酵4—5天。若没有酵母液，可用酒酿代替，最后再加入醋种20公斤。经2—3周后即可成熟，再于60℃条件下加热30分钟后放置沉淀，取出澄清的醋液。将醋粕再进行压榨，如混浊再进行过滤，这样便制成马铃著鲜醋。
