营养成分 每100g鲜菜含碳水化合物3g,蛋白质2.2g,脂肪0.3g,VA240国际单位,VB10.03mg,VB20.03mg,VC10mg,钙170mg,磷34mg,铁0.5mg。叶片中VP的含量很高。我国大多数地区主要食用叶柄,实际上叶片中所含的营养物质比叶柄要高得多。
保健功能 早在2000年前古希腊人作药用栽培,后作香辛蔬菜栽培,经长期培育成具肥大叶柄的芹菜类型。西芹和本芹(中国芹菜)具有相同的营养和食疗价值。
西芹性凉、味甘。含有芳香油、VP及多种维生素、多种游离氨基酸等物质,有促进食欲、降低血压、健脑、清肠利便、解毒消肿、促进血液循环等功效。实验表明,芹菜有明显的降压作用,其持续时间随食量增加而延长。并且还有镇静和抗惊厥的功效。
食用方法 西芹食用方法较多,可生食凉拌,可荤素炒食、做汤、做馅、做菜汁、腌渍、速冻等。尤其其汁可直接和面制成面条或饺子皮,极有特色。
