补充资料:蒜辣牡蛎
材料: 牡蛎300克,嫩豆腐一小块。
调料: 豆豉、豆瓣酱各一大匙,色拉油三大匙,淀粉两小匙,芝麻油一小匙,蒜苗三根,红辣椒一只,精盐少许; (a)酱油两大匙,绍酒一中匙,味精少许,白糖一小匙。
做法: ①牡蛎加入少许精盐,轻轻抓洗,并以清水漂净、沥干,加入淀粉拌匀。
②将蒜苗切成1厘米圆段,放入盘内,加入色拉油,高火3分钟爆香,并将豆豉、豆瓣酱及调料(a)倒入拌匀。
③豆腐切小丁,放入牡蛎中,淋上豆豉等调料,加入辣椒段,加盖中高火9分钟,淋上芝麻油即可。
