| 乳糖 lactose 一种二糖 。分子式C12H22O11 。学名 4-O-β-D-半乳吡喃苷基-D-葡萄吡喃糖 。 由葡萄糖和半乳糖各一分子缩合失水形成。为哺乳动物乳汁中的主要的糖，人乳含乳糖5％～7％，牛乳含4％。从乳清中得到的为a-乳糖 。a-乳糖在93.5℃以上的浓溶液中结晶 ，得到β-乳糖 。从水溶液中结晶时带有一分子结晶水。a 型一水合物为白色晶体或结晶性粉末 ，有微甜味；熔点201～202℃，密度1.525克／厘米3(20℃)，比旋光度  ＋83.5°(水，10分钟)；溶于水。a型无水物为结晶性粉末；熔点222.8℃， ＋92.6°→＋52.3°(水，C＝4.5)；溶于水。β型无水物，熔点253℃ ，密度1.59克／厘米3(20℃)， ＋34.2°→＋52.3°(水)；溶于水。有还原性。可水解成等分子的葡萄糖和半乳糖。在体温37℃下乳中含有的乳糖是2份a-乳糖和3份β-乳糖的平衡混合物。乳糖是奶酪工业的副产品，也可由乳清提取而得。用于制婴儿食品、糖果、人造奶油等。
