原料: 原 料:
嫩豆腐500克,鲜蘑菇100克,酒精35克,湿淀粉25克,麻油25克,精盐3克,味精2克,白糖25克,素鲜汤1000克。
制法: (1)嫩豆腐切成小块,下沸水锅中焯透。
(2)鲜蘑菇洗净,用刀批成整圆片,然后下沸水锅中焯透。
(3)炒锅放油烧热,加入素鲜汤,豆腐块,味精,白糖,精盐,鲜蘑片,用旺火煮沸,撇去浮沫,用小火炖至入味,放入酒石酸糟,复置旺火上烧沸,用湿淀粉勾芡,淋上麻油即成。
特点: 咸鲜味美,醇美适口,益气和中,健脾开胃,抗衰健肤。
