补充资料：干制香椿
采集
香椿在长成木质前都可采来加工，农历3月至4月上旬最为适时，此时的香椿形体丰满，肉质鲜嫩，色香浓郁，营养丰富。采集时将香椿蔸摘下或用镰刀割下即可，要尽量保持蔸体的完整。采后要用湿布遮盖，以防干瘪萎缩。当天运回当天加工，最好不超过10小时。
沸烫
将香椿蔸基部的短小硬皮拣去，并一批一批置于100℃沸水中浸烫3分钟。一次下的料与水体积之比为1:2，太多不便于操作，要上下翻动几次，见香椿软化就捞出，再立即放在4℃的冷水中快速过一下，以保证香椿的色质。
干制
将烫漂的香椿滤干，薄薄摊开置于阳光下翻晒。也可用炉火烘烤。并要防灰尘、杂质污染有条件的，最好用甩水机对香椿料进行离心甩水，随即采用冷冻升华真空干燥工艺，以稳定香椿的最佳色泽及香味。自然条件常规干制的，只要干制得好，也有同样的保质效果。干香椿的含水量以不易碎为度。
包装
将干制好的香椿进行分级包装，要用加厚的食品塑料袋进行冷冻真空密封包装(也可用常规方法、自然条件下包装)，之后贮藏在阴凉、干燥处,待售。只要干制得好，贮藏1－2年不会变质。食用时用温水浸泡2小时左右即可恢复原色原状。
