干制:花椒采收后,应先按不同品种分放在阴凉、通风处摊晾2~3天。然后,暴晒干燥,在阳光下一日晒干的花椒果实质量最佳。暴晒时,切忌直接摊晒在水泥地面或石板上,以免因接触地面烫热花椒,致使其变色而影响质量。若不进行摊晾降温,立即暴晒,一是使果实油胞内的芳香渗入果肉中,呈现跑油或浸油状,使油胞下陷,色泽变黄而不红,品质大降;二是因刚采收的花椒含水分多,如直接暴晒水分蒸发过多,使椒粒产生“气壳”而影响产量。
