【来源】
为鲟科动物中华鲟的肉。
【动物形态】
中华鲟 体长达2米以上，背部狭而腹面平直。吻近犁形，略向上翘，头部被有光滑的骨板。口腹位，成一横裂，吻须2对，等长，平行横列。眼小。鳃孔大，鳃耙薄而尖，约22枚。颌两侧各有1块骨板；体部具骨板5行，背正中一行较大，背、腹侧各2行，另在臀鳍前后各有1～2块：尾鳍上叶有棘状骨板一行，其他部分光滑无鳞。背鳍54～66；胸鳍发达，着生于腹面；臀鳍32～41；尾鳍歪形，上叶发达。体背和头部青灰色，腹部白色，鳍均为青灰色。 生活于大江和近海中。分布长扛、钱塘江流域和其他沿海各地。 此外，尚有白鲟科的白鲟体长达2米余。裸露光滑，仅有小鳞。背灰绿色，腹白色。头颅长，吻延长，突出如剑状，口腹位，眼小。分布东海、黄海，进入钱塘扛、长江、黄河等。此即《纲目》所说的鲟鱼。 以上动物的鳔(鱼鳔)亦供药用，另详专条。

《本草提要》："入手太阴，厥阴经。"
【功用主治】
益气补虚，活血通淋。 ①《食疗本草》："主血淋，可煮汁饮之。" ②《本草拾遗》："益气补虚，令人肥健。" ③《饮膳正要》："利五藏，肥美人。" ④《随息居饮食谱》："补胃，活血通淋。"

内服：煮食。
