主料:荞麦面
辅料:胡萝卜
调料:盐、酱油、醋、芝麻酱、芥末酱、干辣椒、蒜
烹制方法:
1、将胡萝卜切成丝加少许盐腌制几分钟,蒜拍成泥,放入小碗中,加入芝麻酱、醋、酱油、盐、芥末酱调匀备用,干辣椒放入锅中煸干,取出切碎,倒入少许热油制成辣椒油;
2、取一器皿,放入荞麦面,加少许盐拌匀,用开水活面,上蒸锅蒸熟后取出切成片,摆在盘中,周围摆胡萝卜丝,浇上芝麻酱汁和辣椒油即可。
特点:柔韧爽口,酸辣而香。
