原 料：
白菜叶(尽量完整) 4片
猪 肉(肥瘦比3:7) 约200克
鸡 蛋(通过检疫) 3只
配 料：
花生油、黑胡椒粉(白胡椒粉效果不佳)、料酒、白糖、镇江香醋、淀粉、葱、姜、蒜等。
制 法：
1、将猪肉与葱、姜一并用加工机打成肉馅；
2、在盆中将肉馅和1只鸡蛋、几滴醋、黑胡椒粉、料酒、淀粉一个方向用力搅上劲，备用；
3、用开水将洗净的白菜叶轻焯一下变软，用干毛巾轻压吸去水份；
4、在案板上将白菜叶铺开摊平，在其中间位置放上4分之1的肉馅，用叶子将肉馅紧紧包成一个长方形的盒子，接口处用牙签别紧，不令其散开，共得4个；
5、将2只鸡蛋打散成蛋液，均匀涂在盒子上，备用；
6、以中偏小的火(火大油会溅)，将4个盒子油炸至金黄色，备用。
下边的两种做法都挺好吃的：
1、中火用葱、姜炝锅后，放入盒子加高汤没至3分之1处，投适量酱油、盐和白糖，焖烧10多分钟(期间翻一次个儿)，收汤关火撒味精拔掉牙签装盘告成。
成败在于高汤的用量，多了会变成一锅蛋糊糨子，少了不出味儿。
2、中火用葱、姜、蒜炝锅后，倒少量高汤，投适量酱油、盐和白糖，汤开后勾薄芡，关火撒味精，将芡汁浇在已装盘的盒子上即得。
