[原料]水发花胶250克,水发刺参150克,菜心5棵,高汤300克。
[[[调料]]]老抽5克,白胡椒粉0.2克,糖8克,黄酒6克,葱5克,葱姜汁10克,汤皇5克,玫瑰腐汁30克,葱油5克,生粉10克,盐1克,味精0.2克,清油1 5克(实耗)。
[操作程序]
1.刺参顺长切成两半;花胶切成3厘米见方的块。
2.菜心去叶尖后切成两爿;放水油中烫一下,用油煸炒,加盐、味精,再用少量水生粉勾芡后淋油出锅,排在烩盆外沿。
3.水烧开,倒入葱姜汁,再分别将刺参、花胶焯水。锅烧热放油,入葱煸香,放入海参,加入黄酒、胡椒粉、老抽、糖、高汤(100克),烧几分钟后加汤皇,勾芡,淋葱油出锅,装在菜心内圈。
4.净锅,放油烧热,倒入南腐汁炒香,加高汤、盐、黄酒、葱姜汁、花胶,烧开,加汤皇,勾芡,淋上葱油出锅,盛入盆中央。
[特色点评] 色泽光亮,软糯滑爽,味鲜且浓,为席中上品。
[要领提示]刺参、花胶、南腐的质量要好。
