【菜名】 祁阳笔鱼

【特点】 肉质细嫩,甘甜可口,油而不腻,浓香四溢。

【原料】

鲜笔鱼肝油条(重约1000克),姜15克、红辣椒30克、葱20克,酱油25克,绍酒类5克,精盐1.5克,味精1克,湿淀粉10克,鲜汤250克,胡椒粉1.5克,芝麻油10克,熟猪油100克.

【制作过程】

1、将笔鱼宰杀洗净,沥干,切成4厘米长、2厘米宽的骨牌块。 2、红椒去籽,和姜一丐分别切成丝。葱白切成段,葱叶切成葱花。 3、炒锅上旺火,下猪油60克,烧至八成热,放入鱼块翻炒几下,加红椒、姜、葱白、绍酒、精 盐、酱油,煸炒一下,放入鲜汤,焖烧两三分钟,至汤汁收紧,再加入味精、猪油30克、葱花,用湿淀粉勾芡,淋入麻油,撒上胡椒粉即成。
