『酱香田螺』
材料：田螺，紫苏叶、沙茶酱、蒜蓉、豆豉等少量。
做法：将锅底烧红，放油入锅，将蒜蓉、紫苏叶、沙茶酱、豆豉等倒入锅中，爆香，倒入田螺不停地炒，加入滚水，精盐调味，炒至熟透，勾芡加包尾油、麻油和匀上碟。
『五香田螺』
材料：田螺、花椒、茴香、胡椒粉、糖、醋、酱油、精盐、黄酒、姜末、葱花、蒜末、紫苏叶等少量。
做法：⒈蒜粒用油炸到金黄出香味。紫苏叶洗净切碎。⒉炒锅下油，下花椒、茄香、紫苏叶煸出香味后，倒入田螺急火快
炒，2至3分钟后，撒入糖、盐，烹入醋、酱油，并加姜末、蒜末翻炒片15至20分钟起锅。⒊上碟以后，要撒上葱花、味精、胡椒粉。
『蒜蓉剁椒田螺』
材料：田螺、湖南剁椒酱、姜末、葱花、蒜末、栗粉、糖、盐、醋等少量。
做法：⒈田螺用葱、姜水略灼，晾干水。⒉炒匀香蒜、辣椒酱加入少量栗粉、糖、盐、醋等，再加入田螺及料酒，炒熟，勾芡。
