工艺流程:菇体粉碎→热水浸提→过滤→浓缩→低温沉淀→分离→配制→装瓶→杀菌→成品。
操作要点:将灰树花子实体用粉碎机粉碎,细度以提高浸出率为准。热水浸提时,料水比为1:10-15,在96—100℃条件下加热2—3h,使可溶性成分转移至液相,然后过滤去渣,为提高浸出率,残渣可重浸一次。滤液中的主要成分,除灰树花多糖和果胶外,还含有氨基酸、肽类、核酸以及少量矿物质。浸提后滤液的固形物浓度一般约为1%—2%,需使其浓度达到10%左右,不能太浓,否则粘度上升不利于果胶沉淀。浓缩方法以减压浓缩为宜,为了分离所产生的沉淀,需把浓缩置于4—5℃下低温贮藏,使沉淀积于底部,再用虹吸法离心沉淀机分离沉淀物。经分离后的灰树花浸出物含固形物7.55%,白利糖7.0°,全糖4.00%,粗蛋白1.10%,粗灰分0.70%,ph6.0。然后,在其中加入糖和有机酸,按常规法装人马口铁罐,经杀菌后即可获得耐贮藏、风味佳美的灰树花保健饮料。
