紫菜属 Porphyra 红藻门红毛菜科的一属。藻体为薄膜状,色紫红、紫褐或带蓝绿,以其基部细胞向下延伸的假根丝固着在生长基质上。广泛分布于世界温带和亚热带沿海,约45种,中国有12种。紫菜体形及其大小、色泽等常因种类、生态条件、生活环境和季节的不同而有所变异。紫菜藻体虽然比较大,但其营养部分一般是由1层细胞所组成。紫菜在其生活史中具有叶状体和丝状体二个阶段。叶状体阶段可通过产生单孢子进行无性繁殖,有性生殖则是通过精子与果胞(卵)的结合而进行的。 紫菜生长于浅海潮间带的岩石上,中国常见种有:圆紫菜、坛紫菜、长紫菜、甘紫菜等10多种。中国沿海有大规模人工养殖场,年产量仅次于日本,居世界第二位。紫菜富有营养价值。每百克的紫菜干品含胡萝卜素 1.23克,硫胺素0.44毫克,核黄素2.07毫克,尼克酸5.1毫克,抗坏血酸1.0毫克,蛋白质24.5毫克,脂肪0.9克,糖31克,含热量230千卡,无机盐30.3克,钙330毫克,磷440毫克,铁32毫克,还含有多种人体必需的氨基酸。
