蘑菇 Agaricus bisporus 伞菌科蘑菇属。一种食用菌。指白蘑菇、双孢蘑菇、大肥菇。广义的蘑菇则指所有能食用的菌类。白蘑菇栽培历史已有300多年,1605年前后始在法国巴黎附近人工栽培。70多年前采用接种栽培技术,已有70多个国家有人工栽培。产量以美国、法国和中国居前列。白蘑菇现代栽培技术1935年前后传入中国,产地以福建、江苏、浙江、上海为主。白蘑菇子实体群生或丛生。菌盖扁半球形,直径2~15厘米,菌肉肥厚白色。菌盖下有菌褶,离生、不等长。子实体成熟时,大量担孢子由菌褶的子实层散落,在一定条件下萌发,形成菇蕾。白蘑菇为腐生、好气性真菌,靠培养料提供营养物质;培养过程中需加强通风换气,但不需要光线。人工栽培包括:培育栽培种,培养料的前、后发酵,接种培养菌丝,覆土出菇蕾,出菇管理采收。常见害虫有菌蝇、尖眼蕈蚊、瘿蚊和螨类等;常见子实体病害有湿泡病和褐腐病等。可采取培养料灭菌消毒、灯光诱杀、化学药剂处理等措施。白蘑菇是高蛋白食品,并含有除维生素A以外的多种维生素,味道鲜美,并有降血压等功能。
