甘肃草木灰贮藏腌肉
制法：（1）切肉块后蒸肉及抹盐、抹五香粉等，方法同油浸腌肉。（2）分别用麻纸包好肉块。箱底先铺一层厚约10厘米的草木灰，然后码一层肉块擦一次盐和五香粉，放一层草木灰，这样一层层交替码好，一般木箱可放肉块2-4层。最后以草木灰封顶，木箱置于干燥阴凉处。注意：每层草木灰的厚度不小于10厘米；肉与四周箱壁的距离，亦不得小于10厘米。此法不适于潮湿多雨地区。 特点：肉味醇厚，香咸可口。
