    一种二糖。分子式C12H22O11。学名4-O-!!!M0420_2-D-葡萄吡喃苷基-D-葡萄吡喃糖。由两分子吡喃型D-葡萄糖经1,4 位结合而成的糖。自然界中游离状态的麦芽糖不多见 ,主要存在于发芽的谷粒中,特别是麦芽。带一分子结晶水的麦芽糖为白色晶体或结晶形粉末。熔点102~103℃,相对密度1.54,比旋光度!!!M0420_3+111.7°!!!M0420_4+130.4°(4克/100毫升) 。甜度约为蔗糖的1/3。易溶于水,微溶于乙醇,麦芽糖有一个半缩醛羟基,有还原性,能还原费林试剂,很易水解为两分子葡萄糖。麦芽糖是淀粉(或肝糖)被淀粉酶水解的主要产物。可用作甜味剂、营养剂和培养基,也可作糖尿病人的糖补充剂。
