加工工艺流程为
麻竹笋→选料-剥壳→切笋→蒸煮→发酵→干燥→分级包装→发酵笋干
将去壳竹笋,用切片机或手工刀切成长6厘米、宽1厘米的长条,即为笋丝。而笋片则要求长30厘米、宽12厘米,每片重约0.1千克。蒸煮时间约1小时。把煮后的笋片或笋丝连笋带水放入发酵缸内,层层装满后,表面用塑料薄膜密封,也可用洗净的芭蕉叶盖严,再盖草席,然后上面用石块或细沙袋压实。发酵时间最少10天,也有放置半年之久的。待晴天取出发酵后的笋片,平铺在竹晒垫上暴晒,使水分蒸发,通常晒4~5天,色泽转变为黄褐色而略带透明时即可贮藏。
在暴晒过程中,若遇雨天,可将笋干移入室内通风处风干或用炭火烘焙。
