| 反丁烯二酸 fumaric acid 最简单的不饱和二元羧酸。分子式HOOCCH=CHCOOH。又称延胡索酸或富马酸。最早从延胡索中发现，此外也存在于多种蘑菇和新鲜牛肉中。反丁烯二酸与顺丁烯二酸互为几何异构体 。无色晶体 。熔点300～302℃（封管），在165℃（17毫米汞柱）升华，相对密度1.635（20／4℃）。易溶于乙醇。反丁烯二酸的化学性质与顺丁烯二酸相似。反丁烯二酸加热至250～300℃转变成顺丁烯二酸酐。反丁烯二酸也能生成一元和二元酯或酰胺，但不能生成一元酰氯。它与五氯化磷或亚硫酰氯反应生成二元酰氯。反丁烯二酸经高锰酸钾氧化生成外消旋酒石酸。  反丁烯二酸可由顺丁烯二酸异构化制得，常用的催化剂是重金属盐、含硫化合物、无机酸等。蔗糖、葡萄糖、麦芽糖经黑根菌发酵也可制得反丁烯二酸。反丁烯二酸可用于制造不饱和聚酯树脂，也可做食品的酸性调味剂。 |
