葱爆海参
汤勺坐在旺火上,放入猪油(五钱),烧到八成熟时,下入白糖炒呈金黄色,下入葱末、姜末、清汤(三两),酱油和海参,放入料酒(三钱)、姜汁、精盐。对好口,烧开,移微火火靠两三分钟,再上旺火调入糖色、味精。边颠勺边用水淀粉勾芡,翻勺倒在盘里,勺再回到火上,放入糊葱油和葱段烧热,下入青蒜段,浇在海参上即成。
