菜 名: 锡箔陈皮骨
主 料: 净肉排10条、每条长约7厘米、陈皮1小块、精盐5克、味精3克、鸡粉4克、白酒3克、麻油3克、葱1条、生姜1片、胡椒粉0.1克、白糖2克、锡箔纸10小张。
做 法: 1、先将陈皮用水浸软,用刀剁碎待用。排骨装在大碗,把已剁碎的陈皮连浸的水倒入排骨内,再放入精盐、味精,先用手搅拌均匀,再加入白酒、鸡粉、葱、胡椒粉、生姜片,再搅拌均匀,腌制30分钟(也可放入雪柜保鲜)待用。
2、把锡箔纸每张剪成10×10厘米大,再把已腌制好的排骨加入麻油拌匀,把每条排骨分别放在锡箔纸上,然后包成条状待用。
3、将鼎洗净烧热,放入生油烧热,候油温约180摄氏度时,将已包好的排骨放入鼎内炸,用漫火炸8分钟即熟,捞起,分别放在盘上即成。
