脆鳝

原料:

黄鳝丝500克,葱节姜片、黄酒、老抽、糖、味精、五香粉、高汤、各适量。

做法:

1∶鳝丝切成6厘米的段。

2∶锅放油用葱姜煸香,喷黄酒加入高汤、老抽、糖、味精、五香粉等调料烧开后熬成稠汁待用。

3∶另锅中放油烧热,投入鳝丝炸至干脆捞出,放入熬好的稠汁翻匀后取出逐根装盆即成。

tips:

鳝丝在炸时一定要炸透,这样卤汁就会渗透至鳝丝内部。

特色:

酱红色、松脆、咸香带甜。

鳝丝要选野生小黄鳝,色泽金黄,适宜身体虚弱、气血不足,能补虚助力,通血脉、利筋骨,一般是在夏初食用,故民间有“夏天黄鳝赛人参”之说。有搔痒性皮肤病的人慎食。
