   一种多糖。通式(C6H10O5)n。又称肝淀粉、糖原。存在于动物的细胞中,在高等动物的心脏和肌肉细胞中含水量很高,当剧烈运动或肌肉收缩时,糖原会很快地降解为葡萄糖。肝糖是动物贮藏碳水化合物的形式。也是动物间接、迅速可利用的能源,肝糖的结构与支链淀粉相似,由葡萄吡喃糖按α,1→4糖苷键缩合而成,在肝糖分子中支链点之间的距离只有5或6个糖单元,形成像树杈状的紧密结构。
   肝糖可用热水及三氯乙酸溶液、30%氢氧化钙溶液等提取,然后用乙醇使其沉淀。肝糖为白色无定形粉末。比旋光度!!!G0097_1+196.5(水)。溶于水,不溶于乙醇及其他有机溶剂。分子量有百万到数百万之多。遇碘变紫色,遇酸及酵母即行分解为麦芽糖和葡萄糖。
   肝糖的合成和降解受激素(胰岛素)控制,在正常情况下,高等动物有合成和降解肝糖的能力,当激素控制失调,会导致糖尿病。
