| 肝糖 glycogen 一种多糖。通式（C6H10O5)n。又称肝淀粉、糖原。存在于动物的细胞中，在高等动物的心脏和肌肉细胞中含水量很高，当剧烈运动或肌肉收缩时，糖原会很快地降解为葡萄糖。肝糖是动物贮藏碳水化合物的形式。也是动物间接、迅速可利用的能源，肝糖的结构与支链淀粉相似，由葡萄吡喃糖按α，1→4糖苷键缩合而成，在肝糖分子中支链点之间的距离只有5或6个糖单元，形成像树杈状的紧密结构。 肝糖可用热水及三氯乙酸溶液、30％氢氧化钙溶液等提取，然后用乙醇使其沉淀。肝糖为白色无定形粉末。比旋光度  ＋196.5(水)。溶于水，不溶于乙醇及其他有机溶剂。分子量有百万到数百万之多。遇碘变紫色，遇酸及酵母即行分解为麦芽糖和葡萄糖。肝糖的合成和降解受激素(胰岛素)控制，在正常情况下，高等动物有合成和降解肝糖的能力，当激素控制失调，会导致糖尿病。 |
