性质:一项衡量食物蛋白质功能性能的指标,为该蛋白质中能溶解于水的蛋白质氮量占该蛋白质氮总量的百分比。如将大豆蛋白制品样品和水混合在一规定的搅拌器内搅拌一定时间,用离心机分离出液体部分,测定其蛋白质氮量,即可计算出溶解氮指数。在反映蛋白质变性程度的意义上说,如蛋白质分散指数(PDI)是一致的,惟PDI数值往往比NSI高。大豆蛋白制品作为配料,其NSI值将直接影响最终成品的质量。
