作为食用的马铃薯片、马铃薯泥都是德国及部分欧洲人作主食之用,亦有作为点心使用,其中最值得注意的是方便马铃薯泥。
工艺流程:马铃薯--洗净--剥皮--去芽--切片--预蒸--再蒸--研细--干燥(辊筒干燥)--包装--方便马铃薯泥
注意事项:
去芽后切片为1.5厘米厚的薄片,预煮温度60~80℃,泡浸20~30分钟,用以灭酶,然后冷却于25℃的冷水中,时间约20分钟;
然后蒸熟充分α化;
蒸煮后研碎前要喷上亚硫酸盐(为了漂白及贮存),抗毒剂(防止哈败)及乳化剂(单甘油酯,防止颗粒黏结);
有时添加脱脂乳粉末(增加方便食品的吸水性)及磷酸盐,整个工艺中要注意脱水,马铃薯泥不要粘结。为此在预热及冷却时,只希望加热马铃薯细胞内直链淀粉溶解,在冷水中老化成型(强化细胞壁),不要把细胞壁破损;
要适当的加些单甘油酯,防止颗粒粘着。
这种方便马铃薯泥亦可在干燥阶段把马铃薯泥压成片关,成为方便马铃薯片。美国通用食品公司和日本几家食品厂都大量生产这种味美、营养丰富的方便食品。
