作为食用的马铃薯片、马铃薯泥都是德国及部分欧洲人作主食之用，亦有作为点心使用，其中最值得注意的是方便马铃薯泥。
工艺流程：马铃薯--洗净--剥皮--去芽--切片--预蒸--再蒸--研细--干燥（辊筒干燥）--包装--方便马铃薯泥
注意事项：
去芽后切片为1.5厘米厚的薄片，预煮温度60~80℃，泡浸20~30分钟，用以灭酶，然后冷却于25℃的冷水中，时间约20分钟；
然后蒸熟充分α化；
蒸煮后研碎前要喷上亚硫酸盐（为了漂白及贮存），抗毒剂（防止哈败）及乳化剂（单甘油酯，防止颗粒黏结）；
有时添加脱脂乳粉末（增加方便食品的吸水性）及磷酸盐，整个工艺中要注意脱水，马铃薯泥不要粘结。为此在预热及冷却时，只希望加热马铃薯细胞内直链淀粉溶解，在冷水中老化成型（强化细胞壁），不要把细胞壁破损；
要适当的加些单甘油酯，防止颗粒粘着。
这种方便马铃薯泥亦可在干燥阶段把马铃薯泥压成片关，成为方便马铃薯片。美国通用食品公司和日本几家食品厂都大量生产这种味美、营养丰富的方便食品。
