性质：早期常用的油脂水解工艺方法。油脂和水在压热釜中通入压力为1MPa的饱和蒸汽。温度达到该压力下的饱和温度(约180℃)。由于在此温度下水在油脂中的溶解度不够，要加入碱性催化剂，一般用钙、镁或锌的氧化物，以氧化锌较普遍。其实质是第一步生成上述碱土金属的皂，金属皂使油脂与水形成油包水型乳液。在上述条件下反应时间为10h左右，分批进行，分解率可达95％。当原料质量好时，所得的脂肪酸色泽浅，不经蒸馏即可直接用于制皂或其他产品。
