菜 名: 鲜百合蜜糖豆炒牛柳
主 料: 鲜百合1个,蜜糖豆、牛柳各4两(160克),蒜头2粒,姜4片,盐、糖各1茶匙。
配 料: 腌料:梳打食粉1/4茶匙,水、生抽各1汤匙,麻油及胡椒粉少许,糖1/2茶匙,生粉1茶匙,水及油各1/2汤匙。芡汁料:水5汤匙,蚝油1汤匙,生抽、生粉各1茶匙,糖1/2茶匙。
做 法: 1、鲜百合取瓣,修切好,冲净;蜜糖豆撕去筋、冲净,蒜头切片;牛柳横纹切片,再切幼条,拌入腌料腌半小时。2、烧半镬水,加盐及糖和油1汤匙,放下蜜糖豆于滚水内飞水至八成熟,取出隔干水。3、烧热3汤匙油,先炒牛柳条至八成熟,加蒜片及姜片,将蜜糖豆回镬,埋芡兜匀,最后加上百合快手炒匀即成。

鲜百合瓣用盖面水浸可避免变色,用前隔干水。百合不可煮过火,否则质地变软,食时不够爽。
