[原料] 腰果200克,绿茶粉3克,菜叶丝25克。

[调料] 糖30克,味椒盐2克,水50克,精油400克(实耗8克)。

[操作程序]

1.腰果用水冲洗一下,放入烧至100℃左右的油锅中氽熟捞出;再放入菜叶丝炸成菜松,用餐巾纸吸去油并将其揉碎。

2.倒去锅中油,加入糖、水熬融化并成浓汁后放入腰果,翻匀,使腰果表面挂上一层薄薄的糖浆,然后撒入菜松、绿茶粉、味椒盐,拌匀,即可装盘。

[特色点评] 点点翠绿,茶香浓郁。中国的茶文化和饮食文化是珠联璧合,此菜使两者互相交融,也是拓展菜势的一种思路。

[要领提示] 熬糖时注意火候,不能太稠也不能太稀,否则都要影响质量。
