【菜名】 黄瓜泡菜

【原料】

黄瓜1公斤,辣椒面50克,大葱末100克,大蒜末50克,生姜末50克,食盐25克,白糖15克,虾酱50克

【制作过程】

1、选小嫩黄瓜,用淡盐水搓洗干净,控净水,切约8厘米长的条,余下不足8厘米长的部分,去掉皮,剖两瓣,再切成2厘米长的小条垫铺在底层 2、再把8厘米长的段按十字线从两头相对剖口,但都不剖至底而保持整体,然后放10克盐腌渍入味 3、瓷碗内,放辣椒面、大葱末、大蒜泥、生姜末、白糖、10克盐、捣碎的虾酱糊搅拌均匀,成甜辣虾酱糊 4、再把腌渍过的黄瓜挤出水分,在刀口处涂抹匀辣虾酱糊 5、把绿色葱末放入罐底,撒少许盐(5克),再把涂沫好辣酱虾酱糊的黄瓜密实的码进去 6、把余下的甜辣虾酱糊和腌渍黄瓜的盐水泼在上边,用油约封好罐口,存放24小时后,即可食用

材料

黄瓜 6根; 苹果 1/4个; 姜 1块; 蒜头 3个

调料

辣椒粉 2大匙,盐 2小匙 ;鱼露 1大匙

做法二

1)黄瓜洗净,去两端,稍刨去些皮,切成滚刀块,加盐拌匀

2)苹果去皮去芯,磨成泥,姜、蒜均磨成泥

3)黄瓜软后,沥去水

4)容器中放入2)拌匀,加鱼露、辣椒粉、黄瓜充分拌匀,常温下稍放一段时间后,可移至冰箱保存

注 1)辣椒粉和鱼露可在韩国食品店买到

2)没有磨泥的工具可用粉碎机

3)做成后可即食,隔日后入味更好
