原料:嫩豇豆100克,姜末20克,二汤10克,红醋20克,香油10克,葱油5克,盐、味精各3克。
制作:1、将豇豆入沸水中,加1克食粉(以保持颜色翠绿)煮至刚熟,捞出冲凉,然后把豇豆先切出15根长7厘米的节,并在两头分别打个洞,另取整条豇豆从中间纵向一劈为二,将一分为二的豇豆穿过短节上的洞缠紧即可(如图)。2、将缠好的豇豆入盘摆成形,然后淋入用姜末、香油、红醋、葱油、盐、味精、二汤调制成的姜汁即成。
