性质:食物中多不饱和脂肪和饱和脂肪酸的比值。多不饱和脂肪酸为人体所必须,但人体不能合成。必须从食物中摄取。一般植物没事含量较高。脂肪的对正常人的供给量应占每天总热量的2%。如果过量,就会进入肝脏转变为甘油三酯贮存起来。血清甘油三酯过高,就会引发高血脂、高血压、动脉硬化、冠心病、糖尿病等。人们在选择食物时,应考虑食用含多不饱和脂肪酸的植物油来满足机体之需。一般说来,食物脂肪中P/S比值较高为好。例如菜油、豆油、芝麻油、向日葵油、玉米油等植物油P/S比值都在3.2以上,花生油、棉子油在1.8以上。而猪肉、猪油、牛油、羊油的P/S比值,最高的为0.40,最低的仅0.06。
