主料:茄子
辅料:鸡蛋、面粉、大蒜、香菜
调料:盐、高汤精、白糖、料酒、淀粉
烹制方法:
1、将长茄子切成三段,每段顶部切十字花刀,加入盐腌15分钟左右,待茄子变软后裹匀面粉,再沾上鸡蛋液,放入锅中小火煎熟即可;
2、将煎好的茄子取出装盘,蒜末炸香放在茄子上,盐、白糖、高汤精、料酒、水淀粉调成汁放入锅中烧开后淋在茄子上即可。
特点:软嫩鲜香,风味独特。
