主 料： 活龙虾750克，肥肉幼丁20克，冬菇末15克，芹菜末25克，红椒末5克，鱼露10克，味精5克，干生粉15克，湿生粉10克，麻油5克，上汤75克，香菜25克。
做 法： 1、先将龙虾原只洗干净，用沸水滚熟或蒸熟，冷却后，先将虾脚斩出，后斩段用刀轻拍一下，放落碟，头部开两边，把外壳和虾腮去干净，然后斩件摆落虾脚上面。虾的尾部，也开两边，捡去虾屎，后把虾肉取出，撕成粗丝，用碟盛起，加入干生粉拌匀候用。
2、用小碗加入上汤75克（1两半）、鱼露、味精、麻油、湿粉调成碗芡候用。龙虾的脚头放落蒸笼蒸热取出。
3、起镬下油。把龙虾肉下油略走油倒回笊篱。顺便把冬菇末、肥肉幼丁炒炒片时，加入红椒末，芹菜末倒回虾肉合炒一下，投入碗芡抛淋在龙虾的头脚上面，碟边拌香菜即成。
特 点： 鲜甜嫩滑，有色有香。
