油焖苦瓜
原料: 原 料:
苦瓜500克,大蒜3克,葱5克,白糖3克,麻油10克 绍酒5克,精盐5克,辣椒酱5克,味精2克,豆豉4克,干淀粉3克,鲜汤50克,熟猪油100克。
制法: (1)将苦瓜洗净,平剖成两瓣,去尽瓜瓤洗净,切成4厘米长、3厘米宽的片,放在沸水锅内焯水,捞出后放在冷水中浸凉。大蒜剥去外皮,洗净,放在砧板上,用木杖捣成泥。葱洗净,切成末待用。
(2)炒锅上火,放入熟猪,将苦瓜片沾上少许干淀粉,放入锅内煎至两面金黄色,放入绍酒、蒜泥、葱花、精盐、白糖、辣椒酱、豆鼓、鲜汤、味精,用小火焖烧至入味,和小火焖烧至入味,卤汁渐干时,淋上麻油,装盘即成。
特点: 苦瓜软嫩,色泽酱红,鲜咸香醇。
