【特点】 鸡形完整,酥烂脱骨,荷香蒜味,汆味无穷。并有温中补气,补精添髓功效。
【原料】
嫩母鸡一只(重约750克)。 新荷叶1张。番茄酱25克、酱油15克、白糖5克、绍酒25克、精盐7.5克、葱25克、姜25克、蒜头10克、八角3克、花椒3克、麻油15克、花生油1000克(实耗油100克)。
【制作过程】
将鸡从脊背剖开取出内脏,洗净,剔去中骨后排3刀。在鸡皮上抹酱油少许。炒锅上火,放入油烧至五成热(约125℃),投下鸡两面炸透,然后倒出沥油,再放入砂锅内。锅再次上火放油少许,投入葱、姜、蒜头末略煸,再放入番茄酱炒至起沙,加清水、精盐、绍酒、酱油、白糖,烧沸后倒入砂锅。将少许八角、花椒用纱布包好一同放入,加盖烧沸,再置小火焖2小时。荷叶用沸水烫透,摊放在烤盆内,蒋鸡收稠卤汁,包入荷叶中,放进烤箱烘烤半小时,然后再取出装盘,揭开荷叶,将蒜片、葱段放在鸡身上。将麻油入锅烧热,浇鸡上即成。
