性质:无色至淡黄褐色半透明块状,或为白色至淡黄色粒状或粉末。无臭,无味。在水中可逐渐溶解成呈酸性的粘稠状液体,溶解度为50%(W/V),不溶于乙醇。与明胶或清蛋白形成稳定的凝聚层。用酸性醇使其沉淀,则得游离阿拉伯酸。

制备方法:从阿位伯胶树(Acacia senegal)或亲缘种金合欢属树的茎和枝割流收集胶状渗出物,除去杂质后经干燥并粉碎而成。

用途:增稠剂;稳定剂;乳化剂。按我国GB2760-86规定,作为增稠剂可用于饮料、巧克力、冰淇淋和果酱,最大用量为0.5-5.0g/kg。按FAO/WHO(1984)规定,用途及限量为:青刀豆和黄刀豆、甜玉米、蘑菇、芦笋、青豌豆等罐头10g/kg(单用或与其他增稠剂合用量,产品中含奶油或其他油脂);加工干酪制造8g/kg(单用或与其他增稠剂合用量);酸黄瓜500g/kg(单用或与其他助溶剂和分散剂合用量);胡萝卜罐头10g/kg(单用或与其他增稠剂合用量);稀奶油5g/kg(单用或与其他增稠剂和改性剂合用量,仅用于巴氏杀菌掼奶油或掼打用的超高温杀菌稀奶油和消毒稀奶油);冷饮10g/kg(以最终产品计,单用或与其他乳化剂、稳定剂和增稠剂合用量)。亦用作胶质硬糖或胶质凝胶糖的稳定剂。糖果的抗结晶剂及抛光剂。使用时需过滤。
