拌鲜皮丝
原料: 原 料：
鲜肉皮500克，大葱75克，白糖2克，味精1克，醋2克，麻油10克，花椒20粒，芝麻酱15克，酱油10克，菜籽油20克。
制法: （1）将鲜猪肉皮洗净，用刀刮去油污，放入冷水锅内，置旺火上煮熟，拔净毛根晾凉，刮净皮一的脂肪。皮面向下放在砧板上，左手四指压住肉皮，右手持刀，批成3.5厘米长、0.2厘米宽的片，再切成细丝。大葱摘洗干净，先切成5厘米长的段，再由中间划开，展平切成细丝，放入碗中。
（2）炒锅置旺火上，加入菜籽油，烧至六成热，下入花椒炸成深棕红色，捞出花椒不用，将花椒油淋在葱丝上晾凉。
（3）将味精、酱油、醋、白糖、芝麻酱、肉皮、葱丝一起放在碗中拌匀，装入盘中，淋上麻油即成。
特点: 肉皮透明，筋韧有嚼头，口味香、鲜、咸。
