肉脯
即是一种肉干。起源于古代,我国制作肉脯历史悠久。《诗经》、《礼记》等古籍中就有肉脯的记载。古代的肉脯一般是将肉块砸扁、整天,放上姜、桂等调料制成淡肉干;以盐干的肉脯叫盐肉干。一般秋末冬初,取牛、羊、猪宰杀做成肉脯,作为一年的佳肴。按照原料和不同作法,可分为若干种肉脯。
