保定市马家老鸡铺的清真卤煮鸡，色艳形美，肉嫩骨酥，软而不烂，味道醇香，扬名遐迩，脍炙人口，为地方名特产品之一。马家老鸡铺的卤煮鸡选料精良，加工精细。选料必须是鸡形丰满，肉多膘肥的活鸡。煮鸡时除按规定比例投入葱、蒜、姜、花椒、大料、桂皮、白芷、小茴香等外，还投入自制的五香粉。加工出的熟鸡一翼插入口腔，一翼窝向后方，两爪插入膛内，整个外形呈琵琶状，丰满美观。马家老鸡铺从实践中发现老鸡汤的重要性。汤内藏有无数鸡的精华，营养丰富。马家老鸡铺的卤煮鸡之所以味浓清香，保持传统的独特风味，就是这个缘故。
