南京历史悠久，南京人也愿意把各种小吃和历史沾上边。就拿这普普通通的回卤干来说，还和明太祖朱元璋扯上了联系。传说朱元璋在金陵登基后，吃腻了宫中的山珍海味，一日微服出宫，在街头看到一家小吃店炸油豆腐果，香味四溢，色泽金黄，不禁食欲大增。他取出一锭银子要店主将豆腐果加工一碗给他享用。店主见他是个有钱的绅士，立即将豆腐果放入鸡汤汤锅，配以少量的黄豆芽与调料同煮，煮至豆腐果软绵入味送上，朱元璋吃后连连称赞。从此油豆腐风靡一时，流传至今。因南京人在烧制中时常加入豆芽，而其形很象古代玉器中的玉如意故被称为如意回卤干。
