补充资料:豆酱焗鹌鹑
主 料: 鹌鹑4只,普宁豆酱40克,姜2片,葱2条,肥猪肉100克,绍酒15克,味精7.5克,麻油2克,芫荽10克,上汤100克。
做 法: 1、把鹌鹑摔死后脱毛洗净,开背摘除内脏,洗净晾干。把豆酱粒压烂后与姜、葱、酒、味精拌匀,放入鹌鹑腹中,将其腌约1小时。2、砂锅底部垫上两段竹筷子把肥猪肉切成薄片,中间划几刀后铺在竹筷上,把腌制的鹌鹑放在肥猪肉上,从旁加进上汤,把砂锅盖盖上,然后用湿草纸封锅盖边缘,先用猛火烧滚汤后转用慢火加热焗约10分钟取出。把鹌鹑起肉,骨排于盘底,肉用斜刀片成片后放在骨上面,原汤汁加麻油拌匀后淋于鹌鹑上,盘边用香菜围边。
